Réservez-les  dans la partie du milieu du couscoussier. &lt;/li&gt;&lt;li&gt;Dans un grand saladier, versez la semoule et un peu d'eau afin de l'égrener facilement à l'aide d'une fourchette. &lt;/li&gt;&lt;li&gt;Dans la partie basse du couscoussier, versez 150 ml d'eau. Salez, poivrez. &lt;/li&gt;&lt;li&gt;Déposez alors les morceaux d'agneau, les pois chiches, les  épices, l'os à moelle, le persil et les oignons. Laissez mijoter  l'ensemble à feu vif jusqu'à ébullition. Réduisez le feu, couvrez et  laissez cuire 40 minutes. &lt;/li&gt;&lt;li&gt;Dès ébullition, mettez la partie intermédiaire garnie de  légumes et le haut du couscoussier garni de la semoule. Égrenez  régulièrement à la fourchette la semoule. Rectifiez l'assaisonnement si  nécessaire. Continuez de remuer en égrenant la semoule. &lt;/li&gt;&lt;li&gt;Surveillez régulièremet la cuisson des légumes en vérifiant avec un couteau. &lt;/li&gt;&lt;li&gt;Dans un grand plat creux, dressez la semoule, puis placez  harmonieusement vos légumes et vos morceaux de viande au centre.
